Pretty much everything you order at one of his businesses has one of Kelly’s from-scratch elements, whether it’s the steak or hamburger with their specifically designed sauces, the sushi with its lemongrass-and-lime-infused sushi su or even the Bloody Mary with its custom tomato and Worcestershire sauces.

The ebullient Kelly, 42, eagerly discusses the secrets in his sauces. “The difference between something that’s totally homemade and something that’s store-bought is the reaction you have,” Kelly says. Kelly is adamant about producing his own sauces and condiments — he even makes his own ketchups and mustards — because he says it’s essential to bring a crucial element to dishes in both of his restaurants: Authenticity.

The self-taught chef spent many hours in exhaustive research into various dishes, mostly Southern but also Asian. Carrot and orange juice recipe He talks fondly about a cookbook he found through the Pensacola Historical Society.

“A lot of my preparation to become a chef was just looking at food from a historical perspective,” he says. Finding his way, and his sauces, also came with a lot of experimentation and trial-and-error. Usually it takes about two weeks to prepare and properly mature a typical Worcestershire sauce, while an elaborate hot sauce can take up to a month or more for proper aging.

Bottles of the basic Worcestershire are lined up on shelves behind the bar with hand-written labels that read, “What’s This Here Sauce.”

“My dad used to joke that ‘What’s This Here Sauce’ was how Worcestershire sauce got its name,” Kelly says with a grin. Orange juice juicer recipe “I don’t know if that’s true but all I know is I still can’t spell Worcestershire correctly.”

Originally from central Florida, Kelly came to Pensacola in 1992 to study business at the University of West Florida.
