It’s that time of again! The start of a busy school season and for many of us that’s also when quick and easy dishes are totally needed for those hectic weeknights.

I am always on the lookout for new dinner ideas and am guessing we could all use a little bit of help in that area too.

I’ve got a good collection of one pan meals on my site already and with my oldest starting school for the first time next week, you can be sure there’s going to be lots more coming.

With this Skinny Skillet Lasagna you get all the flavors of lasagna without the mess of a bazillion dishes and it’s lighter than a typical lasagna.

We just throw everything in and it cooks right up in the SAME pot – yes, yes even the pasta!

No more layering and you can’t beat the convenience of cooking, serving and only having to wash just ONE PAN.

You can also easily customize this dish with your favorite pasta, veggies and protein.

Because we all like having options, I’m showing you a combo of gluten-free brown rice bow-tie pasta and white pasta – they both worked really well in this dish but you may need to adjust the liquid ratio depending on the brand you choose.

Not only is this skillet dish comforting and delicious, we also lightened it up using part-skim mozzarella and fat-free cottage cheese (which I’ve used HERE and HERE) and it still keeps this creamy and delicious without the added guilt!

For the protein, I used extra-lean ground turkey to keep things on the skinny side but you can totally use what you have on hand or keep it a meatless dish with some sliced mushrooms instead.

You guys know I am always trying to sneak in more greens whenever I can so I tossed in some chopped zucchini and spinach.

And in case you’re looking for an even skinnier and healthier low– carb option, we made this same skillet pasta using zucchini ribbon noodles which you can find HERE and my husband couldn’t even tell by looking at this dish that those noodles are actually ribbon-ed zucchini noodles. Easy Skinny Skillet Lasagna is healthy and takes just 30 minutes in only one pot or one pan – no boiling and even the pasta gets cooked together. Recipe for homemade lasagna with cottage cheese Lightened up and healthier – easily customizable with gluten free pasta and protein of your choice.

1/2 – 1 lb extra-lean ground turkey (or protein of your choice)

2 scant cups (8 ounces) dried farfalle (bow-tie) pasta (white, gluten-free or whole wheat)

1 (14.5-ounce) can diced tomatoes (I recommend San Marzano or fire-roasted tomatoes)

• Heat the olive oil in a large skillet over medium-high heat. Lasagna using cottage cheese instead of ricotta Add the garlic and saute for 30 seconds to a minute or until fragrant.

• Add in the ground meat and cook until browned, about 3-4 minutes, making sure to crumble and break down into small pieces as it cooks; drain excess fat.

I made it tonight in a big batch that will be my dinner/lunch for the next few days.
