The basic principle with cooking meats is that your looking to balance 2 different goals that are somewhat at odds.: moisture retention, and texture.

Moisture means water and fats, these render-out/evaporate quickly and at relatively low temperatures. A strong marinade like this on a flavorful piece of fish like salmon is just overpowering natural flavors.
