To end the week I am sharing another version of probably the most popular Indian dish in existence:

Murgh Tikka Masala Kashmiri Style – Chicken in Tomato Cream Sauce

Chicken Tikka Masala is guaranteed to appear on nearly every Indian restaurant menu you find. Curry base sauce recipe jamie This aromatic and flavorful dish of chicken enveloped in a rich and creamy red sauce is definitely a favorite the world over! This version of the ‘most popular Indian dish’ is from a hotel restaurant in Dhamba in the Indian State of Jammu and Kashmir prompting me to give it the moniker ‘Kashmiri Style’ – Absolutely incredible served with naan or basmati rice and raita

I have explained before that there are literally as many recipes for chicken tikka masala as there are people that prepare it (I have more than 20 different versions myself)! Probably the most recognized and enjoyed Indian dish world wide – So popular in fact that Britain proclaims it as their National dish… Good curry sauce recipe The only things that make this version ‘Kashmiri Style’ is that it originates from a hotel restaurant I worked for in the city of Dhamba in the Indian State of Jammu and Kashmir and that it contains saffron which is found throughout Kashmiri cuisine due to its availability in the region.

I have said that the dish ‘Tikka Masala’ is claimed to not be Indian at all but actually invented in the 70’s by Chef Ahmed Aslam Ali at his restaurant Shish Mahal located in Glasgow Scotland! This may be the most ‘accepted’ story of its origin but, there are other claims to its origin:

The Moti Mahal restaurant in Delhi also claims to have invented chicken tikka masala sometime in the late 1940′ or early 50’s, while Chef Zaeemuddin Ahmed of Delhi’s Karim Hotel established around 1858 claimed that their recipe for chicken tikka masala had been passed down through the generations of his family and was on the menu of the Karim opening day.

The truth is, there are references to chicken tikka masala (almost identical to the versions we know today) being served during the Mughal rule of India (1526-1858) and subsequently during the British Raj (1858-1947). Indian curry sauce recipe with yogurt But, even before either of those, there are references to similar dishes being prepared nearly 5000 years ago following the Persian invention of the tandoor oven and subsequent ‘Joleh’ (the Persian word for ‘Tikka’) – a dish of spiced, bite sized pieces of boneless chicken roasted in the tandoor.

So it is more than probable that the dish we know today is much older than the claimed ‘British invention’. British chip shop curry sauce recipe I personally believe that the dish IS Indian based on these references AND the fact that the name of the dish ‘Murgh Tikka Masala’ literally translates as ‘Spiced, Bite Sized Pieces Of Chicken’ leads me to believe that someone in India, Pakistan, Persia, or the surrounding regions made a dish of ‘spiced bite sized pieces of chicken’ in a gravy long before the 1970’s!

Regardless of who invented the dish and its actual origins, I say that we let everyone else fight it out and just enjoy this staple of Indian menus no matter where it comes from and what version you like the best!
