• Cook the pasta according to package directions, drain, rinse, and add back to the pot.

• Add all other ingredients to the pot of cooked pasta and stir and leave covered over a low simmer for 10 minutes or until the veggies soften.

What’s for dinner tonight? Of course, if you don’t eat it all or are just cooking for a small crowd, you’ll have some fantastic leftovers for lunch tomorrow! I don’t know about you, but I do love eating leftover pasta dishes! I think they taste even better the next day once the flavors have really marinated in there!

His favourite (and daily staple if he had his way) is spinach pasta with green pesto, ham and raisins.
