FAIRMONT — A gluten-free diet has become more and more common for people every day.

According to the Celiac Disease Foundation, gluten is a name for proteins found in wheat, rye and barley.

Leisha Elliott, executive director of the Marion County Convention and Visitor’s Bureau, has chosen to be on a gluten-free diet since August 2014.

“Although I am not as sensitive as some people that have a true reaction to it, I just choose not to eat it,” Elliott said.
