FAIRMONT — A gluten-free diet has become more and more common for people every day.

According to the Celiac Disease Foundation, gluten is a name for proteins found in wheat, rye and barley.

“Gluten can be found in many types of foods, even ones that would not be expected,” the website said.

Gluten items include bread, baked goods, cereals, salad dressings, food coloring, soups, beer, yeast, oats, pastas and many other items.


For some the disease can be life threatening, but for others it is a choice.

Leisha Elliott, executive director of the Marion County Convention and Visitor’s Bureau, has chosen to be on a gluten-free diet since August 2014.

“Although I am not as sensitive as some people that have a true reaction to it, I just choose not to eat it,” Elliott said.
