Great recipe, and I couldn’t agree more with the “4-minute discipline” you alluded to, which applies to cooking so widely (beef, chicken, etc.) – you just need to get disciplined to enjoy the superior results!

I also loved the precaution on salmon-specific cooking more rare and tenting to finish cooking off the heat – this is indispensable! (also applies to other meats but salmons just gets ruined when overdone – oh what could have been…).

The Pinots you mentioned also are great and the lack of arm-twisting so apropos!
