Starters _ dee-lish!

Last week I prepared this soup as a starter for 120 guests – it was nothing short of perfection! I am still receiving calls for the recipe! I hope you enjoy it as much as they did. Best ever salmon recipe ??

• 1 large leek (white and tender green), well rinsed and minced

• In a nonreactive soup pot, combine mussels and wine.

Best healthy salmon recipe Bring to a boil over medium-high heat, cover, and cook until mussels have opened, 5 to 7 minutes. • In same soup pot, melt butter over medium heat. Best salmon burger recipe Add leek and celery and cook, stirring occasionally, until softened, about 5 minutes. Best salmon cake recipe Add fish stock, thyme, bay leaf, peppercorns, parsley, saffron, remaining cooked mussels, and reserved mussel liquid. • In a food processor or blender, puree soup in batches until smooth and return to soup pot. Best salmon recipe Bring to a boil. This next starter is a little different but if you love good cheese and good venison then its an absolute must try!

• Cut the cheese into 12 slices and place a slice of pear as well as a basil leaf on each slice and wrap in a slice of smoked venison. Easy salmon dinner recipes Combine the olive oil, lemon juice, lemon zest, some shredded basil and a good grind of black pepper in a bowl. Easy salmon patty recipe Brush the wrapped halloumi slices with the dressing and cook under a hot grill, turning at least once and basting as they cook. Another winning starter is crostini elegantly placed on the table so that guests may nibble as they like. Easy salmon recipes oven Not to mention the flavour toppings you are able to come up with!

Then for the topping you can literally go buck wild! Have fun with colours, flavours, herbs – just talking about it gets me all excited!

Get yourself six large ripe figs, 12 slices of prosciutto, and a small bunch of fresh mint. Easy smoked salmon recipes Tear the figs in half, then drape a piece of prosciutto over each of your hot crostini and squash a piece of fig on top. This is an oldie but a goody! There’s something about the mention of prawns that I guess adds that “special touch” to a dinner. Fresh salmon patties recipe Now what I do just to add a little flavour to the prawns or shrimp is either I lay them on a baking tray, in a bowl I put about two tablespoons of margarine, fish spice, freshly chopped garlic, one finely chopped red chilli, salt, black pepper and parsley. Grilled salmon burger recipe I then place it in the microwave for a few seconds just to melt, mix it together and drizzle over the prawns. Then for the cocktail itself: (again, I love to play with this kind of starter there are so many variations and I’m quite certain you will find the one that suites you best!) Ingredients:

• Place the prawns, mayonnaise, creamed horseradish and tomato sauce into a mixing bowl. Grilled salmon steak recipe Stir to combine all the ingredients; make sure all the prawns or shrimp are coated in sauce .

• Divide the shredded lettuce between 4 large wine glasses and top with the prawns and sauce.

• Decorate with a wedge of lime and a large prawn on the edge of the glass and serve with small slices of melba toast or homemade brown bread.
